1)Using an optical cable, attach your PS3 to your surround system, or
2)Using the AV cable red and white RCAs, plug these into the surround system, or
3)If your TV has audio out, connect this to your surround system (some use AV2 as an output, you then have to go to TV settings and tell the TV what you want to output to AV2)
Now, depending on which cable you have used, on the PS3 got to Settings|Sound Settings and set the outputs to that which your surround can handle Dolby 5.1/7.1 etc. Hopefully, if you now turn your surround system to the input in which you have plugged the cables in, you should now get the sound from your PS3
The reason I chose a Sony Receiver was that it has shed-loads of inputs so I could plug my Sky, DVD Recorder, PS2, PS3, Wii and computer into it. I then have outputs to the TV (and one back to the computer). It has the 5 speakers and sub (5.1) and all I have to do is change the input on the receiver and everything is routed through it to the TV and speakers (I like simple)
